Happy Valentine's!

Not that I have a Valentine(sighs, forever alone), but I wanted to treat myself to something. What a good time for a pamper session, right?

So I light a few candles, get out my wine bottle and a couple of cupcakes that are decorated for Valentine's day. I make myself a bath, use a pink(DIY-ed) bath bomb. Scroll through Instagram, see how everyone gets their presents and a night out. So I turn it off since it makes me sad. I get out of my bath, get all cozy in my room, and play me some 'Valentine's day'. Popcorn are essential as well as my pink lemonade. Everything pink, right?

Okay, back to reality. I don't have a Valentine, neither do I celebrate Valentine's day. The only thing I do like to do for this day is bake. I made pink and red meringues dipped in white cream and colourful sprinkles(Try here!) and vanilla cupcakes coloured  in pink with white frosting on top(Here). It's all so delicious, my little brother ate a whole lot of meringues and two cupcakes(he usually doesn't eat as much, so this really is a miracle)

If you were alone on this Valentine's day, don't worry, there are much more to come, and you sure won't be #foreveralone. Unless you don't want it to, which in that case, you're amazing.

And if you had a Valentine, then tell me how did it all go, what did you do?

Until next time,
Sofia.

Hello beautiful!

Good afternoon!

I am sitting in my chair, sipping on some forest fruit tea, thinking about what should I write about. I realized I haven't actually said anything about me, so I decided to be a little self-centered and make this about me.

My name is Sofia and I'm 17 years old. I made this blog to capture all of my passion. Actually, I made this blog as a cookbook. I was writing in my regular cookbook and I look down on my handwriting and I go 'Damn it, it's terrible!' So I sit on my laptop and make this blog so I can write all the interesting recipes without smudgy letters.

I have a little obsession with baking cookies and cakes, as well as pizzas and other good stuff. Also, I am highly interested in makeup and hair related things.

Alongside recipes, I will share with you my beauty tips and tricks and also my routines(i.e. everyday makeup, hair routine, etc).

Although I don't expect my blog to be huge, I'd appreciate it if you could check it out and leave me your opinions in the comment section. Hopefully you'll enjoy it if you stumble upon.

Talk to you tomorrow,
love,
Sofia.

Vanilla Cupcakes

You'll need:

For the cupcake:
125g caster sugar
125g flour
125g butter
2 large eggs
1/4 teaspoon baking soda
1 1/2 tablespoons of milk
1/4 teaspoon vanilla extract
whipped cream
sprinkles

Pre-heat your oven to 170 degrees Celsius. Mix all the ingredients until combined. Place muffin tin and muffin cases into it. Scoop around one tablespoon into each muffin case. Bake for 15-30 minutes, or until nice and golden.

Make whipped cream with powder and milk, adding a little bit of vanilla extract.

Use piping bag to put the icing on cakes. Add sprinkles on top or leave it as it is.

It's done!

Meringues

For this recipe you will need:
3 medium sized eggs
150g caster sugar
vanilla extract

Pre-heat the oven to 110 degrees Celsius. Separate egg whites and whisk until they are no longer wet looking. Add half of the sugar and a teaspoon of vanilla extract. Whisk. Add the rest of the sugar and fold it in. You can add food coloring if you prefer. Don't mix as you don't want to lose the airiness of the egg whites. Use a piping bag and place the mixture on a tray with baking sheet on it. Place it in the oven for about one hour.

If you want, you can decorate it depending on the occasion.

Melt chocolate with a little bit of oil for shiny texture. Dip your meringues in the chocolate when cooled. Add sprinkles of your choice(as much as you want!)

And you're done!
